It was a rainy Wednesday, I had two teething babies and a four year old who got outta’ bed the wrong side. Needless to say it was a perfect pyjama day. Perhaps more so on account that Little Man refused to get dressed. Anyway, imagine my horror on realising we had no treat stuff in the house. Gone was the opportunity to eat my not-so-secret stash of Bounty’s in the glow of the fridge door. My only other option was to wish for a combined nap time so I could gorge myself on the only kind of chocolate we had in the house – the cooking chocolate. No, instead I decided to power through the reek of desperation I was emitting and make these Chocolate Chip Cupcakes! *high five*

CHOCOLATE CHIP CUPCAKES

PREP TIME : 15 minutes
BAKE TIME : 15 minutes
WHAT YOU’LL NEED

4oz SR flour
2oz Castor sugar
3oz Butter
Few drops of vanilla essence/extract (whichever you have to hand)
2 eggs
Pack of chocolate chips
1 tablespoon of hot water

WHAT TO DO
  1. Line a muffin tray with cases and preheat oven to 180°c;
  2. Cream the butter and sugar together until light and fluffy;
  3. Add the vanilla;
  4. Beat in the eggs one at a time;
  5. Sift in the flour and then gently fold;
  6. Continue this and add the chocolate and hot water;
  7. Spoon into prepared cases and put in the oven for approximately 12-15 minutes. The mixture will make a dozen (or eight bigger ones if you’re that way inclined. I certainly am!);
  8. Then I simply leave in the pan to cool before transferring to an airtight box. Assuming I haven’t eaten them all in an emotional feeding frenzy that is…
